One of the most representative cheeses from Switzerland, Appenzeller has all the features we've come to expect in a "Swiss" cheese: pale yellow color, firm and milky texture, small holes throughout, and a spicy, nutty flavor. Aged for at least 3 months, Appenzeller is consumed young, and has a smooth finish despite it's firmness. Most importantly, Appenzeller is rubbed with a herbal brine, a recipe that is closely guarded! We do know it contains herbs, wine, and pepper, infusing it with that delicious piquancy. A cheese with this much personality should be paired with a robust drink, such as a bold Merlot or a strong Bock beer. Uses: cheese plate and a winter fondue.
